Most commonly they will use ice and salt as cooling agents and the dasher will spin the ice cream mixture of your choice and freeze it to the right temperature where it neither freezes nor remains melted.
Some of these machines will require some manual dasher cranking, which may be a little annoying, while others are more automated. To make it easier you might want the automatic one, but the cranking has its charm, especially when making it with your kids.
If you are a family person or simply want to have a fun experience, an ice cream maker for your kitchen is probably the most fun appliance you can buy.
