Is Your Pan Hot Enough? Check the Oil for Clues

With all of the preheating business we have discussed in the past, it’s only fair to look into how to tell if your cooking pan is hot enough. While it is best to cook food on a heated pan for delicious, un-scorched and non-sticking results, you may be surprised to find the perfect temperature lies in how your oil looks according to America’s Test Kitchen. You’ll want to begin with a cool pan and a dollop of oil. As the pan heats from your stovetop, you’ll notice the oil will extend outward and become smoother.  When your cooking pan arrives at the temperature you need, the oil will glisten and form various patterns of soft ripples. This is the perfect temperature for cooking veggies—fajitas anyone? If you’re looking to sear or brown up a concoction of tasty goodness, your pan must be hotter. America’s Test Kitchen mentions small amounts of smoke will let you know you have that perfect temp. Be careful not to burn your oil as you’ll need to start all over again with fresh oil; most importantly, don’t let your oil get too hot and scorching as this is could potentially lead to a grease fire.
