Peanut brittle is always a delicious treat, especially when you’re in the mood for something salty and sweet. Why not make some brittle super quick with a few zaps with your microwave? Croutoncrackerjacks shows you exactly how to make some foolproof peanut brittle that is easy and uses common cooking ingredients.
Here’s what you need: 1/2 cup light corn syrup 1 cup white sugar 1 cup roasted, salted peanuts 1 Tbsp butter 1 tsp vanilla extract 1 tsp baking soda Croutoncrackerjacks uses a 2.5 quart glass mixing bowl—glass being key! He mixes the corn syrup and sugar together, nuking it in the microwave for 3 minutes on high. This stuff is extremely hot, so make sure you use oven mitts, and use extreme caution when making your peanut brittle microwave style. He adds and mixes in the peanuts, and zaps his concoction in the microwave for another 3 minutes. Then, croutoncrackerjacks tosses in the butter and vanilla extract, and heats it for another minute and a half. Finally, he adds in the baking soda and tosses the bowl back in the microwave for another 30 seconds so it is foamy, and has a tan color. Stir, stir, stir! Afterwards, pour your concoction onto a greased baking sheet or onto some parchment paper. Allow your sticky peanut mixture to cool, and then smash it into pieces. That’s it. You may now stuff your face. Overall, this is a simple process as opposed to using your stove top.
